Agree 100%. In fact, Scott Kelby did a whole presentation B&H Photo presentation about using the iPhone as your backup. That said, if I have room for another camera body or even my trusty little Fuji X70, I bring it.
It's a comfort thing, which will be different for every photographer and situation. I know of a photographer whose assistant dutifully prepped and packed her for a 2 day shoot a couple hours from her studio, but in the rush neglected to pack her camera bag (with backup camera and flash). Arriving at the event, she was forced to shoot day one with her iPhone 12 Pro Max. The pictures were great and some of the family favorites from the weekend. The iPhone is clearly a suitable backup camera for many situations as you've found.

It it were me, I would take your OM1 system and your Pen F as a backup. You would be backed up without much extra weight.
